Mojito Rooster

ingredients:

  • 1 liter diet 7-up or Sprite
  • 32 ounces light rum
  • 3 tablespoons frozen limeade concentrate
  • 1 bunch of fresh mint
  • 1 lime zested
  • garnish with lime and mint
  • Perrier

instructions:

How to cook Mojito Rooster

  1. Combine all ingredients in a 1-gallon plastic ice tea jug. Stir to combine. (Spigot not required)
  2. Place Mojito jug in freezer over night. Take jug out in the morning and stir.
  3. Mojito will freeze to a slushy consistency. Scoop into a highball glass with a straw for stirring. Top with Perrier and garnish with fresh mint and lime.

NOTES:

"Rooster" drinks began with a Red Rooster I had at a party in La Quinta. I have created several versions that are low-calorie and this is one of my favorites! Tip: I always keep frozen limeade and frozen lemonade concentrate in the freezer and use it as needed for Roosters!
